200g [7oz.] sauerkraut

100g [3 1/2oz.] bacon

150g [4 3/4oz.] ham

500ml white wine

4 tbsp zaseka (minced bacon and lard)

caraway seeds

Put sauerkraut in a pan, add water, bring to a boil, and cook for a few minutes. Drain, and add two tablespoons of zaseka. Place slices of bacon in an earthen baking dish, and cover with sauerkraut. Season with caraway seeds, and add ham, peppercorns, juniper berries, two more tablespoons of zaseka, and white wine. Start baking on medium heat, gradually raising the temperature in the oven until golden brown.
