Pork ham with sauerkraut
Ingredients:
Pork ham or pork loin
1 finely copped onion
400 g (14 oz. Sauerkraut)
red peppers
bay leaf
pepper
peppercorns
salt
lard
Remove bone or bones and spread the meat flat. Pound it with meat mallet and season it.
Fry the onions in a pan, add sauerkraut and black peppers, season with peppercorns and bay leaf. Cover and let it simmer for 10 to 15 minutes. Spread the sauerkraut over the meat, roll the roast and tie it with a string. Place in a greased baking dish and roast for about one hour, basting frequently.
